Hummus

Hummus is a Middle Eastern staple made from chickpeas and tahini. You can use hummus as a side condiment, as a dip for parties, and in sandwiches and wraps to replace butter. Below are the ingredients and the basic method of making hummus.

Ingredients
  • ¼ cup of tahini paste (hulled or unhulled)
  • juice from one whole lemon, freshly squeezed Lisbon or Meyer
  • 2 cloves garlic, or more to taste. If using preserved garlic, measure 2 teaspoons of crushed garlic
  • 400 g can chickpeas
Optional extras
  • ½ tsp ground cumin
  • 1 tbsp tamari soy sauce
  • 3 tbsp chopped fresh parsley, remove stems 
Instructions
  1. Place tahini, lemon juice and garlic in a food processor.
  2. Blend until smooth. This can be achieved using the pulse feature of the food processor. 
  3. If preparing a dip, you can add more lemon juice or bean liquid to thin hummus.
  4. Place in a container and store in the refrigerator.
  5. You can freeze hummus for later use
